Fruit pizza & in-training

Yesterday Barry and I celebrated our fourth wedding anniversary. I cannot believe it has already been four years!

I always like to look at the “traditional” wedding gifts for each year, and I try and choose a gift that fits the theme. For the 4th anniversary, the traditional gift is fruit or flowers. At first I wasn’t sure what I was going to do with that for Barry. But then I remembered how we ate at that buffet restaurant the night before the Varmint, and they had fruit pizza for the dessert. Barry really enjoyed it. So I decided to recreate it for him. I started with baking a crust using sugar cookie dough.

I had to do the crust yesterday morning before I left for work so that it could cool. I also made the “sauce” for the pizza (aka fruit dip) while the crust was cooking.

My best friend’s mom was nice enough to share her fruit dip recipe with me! Funny story- that crock in the background was their wedding gift to us. Once I got home from work I sliced up all of the fruit, spread the fruit dip on the crust, and topped it with the sliced fruit. I thought it looked pretty good for my first time making fruit pizza, although it’s not that complicated.

Once I was done admiring my handy work, I wrapped it up and stuck it in the fridge to surprise Barry with later.

Once Barry got home from work, we went out to eat at a local restaurant we had both been wanting to try. It ended up being really good, so I’m glad we went! Then we exchanged cards and gifts when we got home. Barry was surprised with his fruit pizza. He got me a Marine Corps Marathon in-training shirt!

That was good timing, since as of yesterday I am officially in training. I may or may not be wearing my new shirt as I type this…

Of course, Barry had eaten too much at dinner and initially was too full to try any of his fruit pizza. But right before he went to bed, I made him have a slice. Plus I wanted to try a piece to make sure it turned out alright! It did 🙂 You can’t go wrong with that much sugar combined with fruit. The chickens had a nice anniversary, too, as they benefitted from the strawberry scraps.

I should probably also mention that I started yesterday morning with a 3 mile easy run with Sven, as day numero uno of marathon training. Let the games begin!

    The fruit pizza looks good. And so creative. I am curious though. Where did you find a restaurant that filled Barry up too much to eat when he got home?

    1. We went to the Steer House in town. They have an unlimited salad and dessert bar, and he had three desserts! I kept saying “don’t eat too much, you won’t feel good” but Barry didn’t listen. 🙂 Of course, I couldn’t just say “don’t eat too much, because I actually made you dessert as your anniversary gift.”

  2. Let the training begin!! I love it when people do fun and creative ideas with the anniversary “themes.” For my sister and BIL’s first anniversary, which is paper, my sister got him (paper) plane tickets for a vacation. Fruit pizza sounds DELICIOUS!

    1. I like what your sister did for the “paper” anniversary! I can’t remember what I got Barry… hmmm. I’m happy to say the fruit pizza was delicious!

  3. Happy Anniversary!! The fruit pizza looked awesome. I’ve never heard of the traditional anniversary gifts, I’m looking into this for sure. Never had a “in training” shirt, didn’t know some races had those. Man I learned so much from this post today lol

  4. I have wonderful (terrible?) memories of dessert pizza. When my family first moved to NC (from Massachusetts) we discovered a pizza place that had an all-you-can-eat buffet (we had never heard of such a thing)! There was dessert pizza on the buffet. Lets just say I ate more than my fill…on more than one occasion. Eh 😦
    Tasty stuff, though, and yours looks even better!

    Kurt and I usually forget about our anniversary. Romantic, I know.

    I’ve had an in-training t-shirt from our local marathon training group, but everybody in the group is training for different races, so it’s generic, not specific to a race. Yours is much cooler (and very pretty!!)

    1. Oh, that’s too bad dessert pizza has been ruined for you! I bet we all have a bad association with a certain food like that from when we were kids. Mine is ramen noodles, but I don’t go into the details as to why.

  5. Happy Anniversary! We’ve never done traditional themed gifts, but we have often gone on vacations for our anniversary. We’ve been married 28 years and it’s wonderful being married to your best friend!

    1. Thanks! Wearing the in-training shirt gets me excited for the race! I’m even looking forward to the training. It’s going to be tough, but it’s going to be totally different from anything I’ve ever done before.
