Happy St. Patrick’s Day!

Yesterday after the race and awards ceremony we grabbed some lunch at a small diner (Texas Tavern for anyone who’s familiar with Roanoke). Then we hit the road for home, and got home around 1:30 after making a quick stop at the grocery store. Once we got home I did my level 3 Jillian workout and let me tell you it was one of the toughest times I’ve done that workout. I was fatigued from the race, but I had had a few hours rest. What really got me was it was 1:30 in the afternoon and I had yet to have my coffee for the day, which meant I had a pounding caffeine headache. It made getting through the workout really tough, but I did it.

This morning I met up with my running buddy for a long run at the trail in town. We ran 5 miles together in the drizzly rain. It’s one of those gray days where you never see the sun. I think it’s somewhere in the upper 40’s, though, so at least it’s not cold (just chilly). When I got home I did my level 3 workout. Today was day 28 which means I only have two days to go!

I currently have this Cream Cheese Chicken Chili recipe cooking in our crock pot for dinner. Rainy gray Sundays are good for crock pot dinners. Plus we have leftover cornbread that I made on Friday, so that’ll go well with the chili. I came across the recipe on HRG’s blog and it’s our first time trying it. it looks like it’ll be delicious, though!

I also got these two bags of chips at the store. They were buy 1 get 1 free. Barry and I really like the Dill Pickle ones, and the Sriracha is one of the three new flavors Lays has out. The other two are chicken & waffles and cheesy garlic bread. I really like this one, as it pretty much tastes like a potato chip with mild hot sauce, which is a good mix in my book. The store didn’t have the other two flavors, but I’m not sure how I feel about them anyway. Neither one is really appealing to me as a potato chip flavor.

The rest of the day today will be spent resting, hopefully watching the Nascar race on TV as long as there’s no rain delay/cancellation, and reading my current C.J. Box book (book 3 in the Joe Pickett Series).

  1. I try to stay away from Lays chips because I have absolutely no self control when it comes to salty deliciousness, but I think that the Siracha flavor sounds right up my alley! Today was all about running errands, food prep, and potty training the new puppy.

    1. They’re really good, you should try them! Barry and I both really liked the crock pot meal. Definitely worth a try and I highly recommend making cornbread to go with it.
